It is that time of year again. It is getting colder and colder, but that means it is time for baking fall treats! This is a great treat to have when you feel a craving, but this is also a vegetarian recipe. Fall is the best time to make pumpkin spice desserts, so here is a recipe to make wonderful, delicious pumpkin bread!
½ cup of softened butter
1 cup of dark brown sugar
1 cup of pumpkin puree (NOT pumpkin pie filling)
2 tsp ground cinnamon
1 tsp pumpkin pie spice
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 ½ cups of all-purpose flour
Step one: Preheat your oven to 350 degrees Fahrenheit.
Step two: Grease an eight or nine inch pan with cooking spray. Place the pan on a baking sheet in case of any spill-over.
Step three: In a large bowl, beat together the butter and brown sugar until creamy for about one minute.
Step four: Beat in the eggs and pumpkin to combine.
Step five: Add in the spices, baking powder, baking soda, salt and flour. Mix to combine and be careful not to over mix. (Mixture may be slightly lumpy. This is okay! Over mixing will lead to tough bread)
Step six: Pour the mixture into the prepared pan and smooth out the top.
Step seven: Put the pan in the oven and bake for approximately 45-55 minutes. Insert a toothpick in the center to see if it is done. If it comes out clean, it is done.
Step eight: Cool for at least 20 minutes before taking it out of the pan.
Step nine: Cut into slices and enjoy!
You can always add chocolate chips or anything you want into this recipe to make it your own.
